Greek Recipe: Tomato Pilaf

GREEK RECIPE: Tomato Pilaf

  • 1 cup solid pack tomatoes, drained, sieve pressed
  • 3.5 cups water
  • 1 Tbs butter
  • 1 tsp salt
  • 2 cups rice

Melt butter in a pot. Add tomatoes and blend. Add water and salt and bring to a boil. Add rice and mix well so rice doesnt stick together. Reduce and simmer over a very low flame 25 minutes. Do not remove lid until ready to serve. Let stand for 10 minutes befor serving. Serves 6 to 8.
