Greek Recipe: Stewed Lamb with Fresh Shelled Peas

GREEK RECIPE: Stewed Lamb with Fresh Shelled Peas

  • 2 lbs lean lamb cut into 1" pcs
  • 6 Tbs olive oil
  • 1 lg onions minced
  • 1 1/2 cups solid pack tomatoes with juice
  • 1 clove garlic minced
  • 1 tsp dried sweet Basil
  • 1 lb fresh shelled peas
  • salt and pepper to taste

Wash, shell peas. Drop peas in water and a little vinegar and set aside. Heat oil in a pot, add onions, garlic and sautee until golden. Add lamb and brown.

Add tomatoes and simmer covered for about 1.5 hours or until meat is tender. Drain and add peas. Simmer covered for 30 minutes more or until lamb and peas are tender.
