Greek Recipe: Stewed Lamb with Fresh Lima Beans

GREEK RECIPE: Stewed Lamb with Fresh Lima Beans

  • 2 lbs lean lamb cut into 1" pcs
  • 6 Tbs olive oil
  • 1 lg onions minced
  • 1 1/2 cups solid pack tomatoes with juice
  • 1 clove garlic minced
  • 1 tsp dried sweet Basil
  • 2 cups fresh lima beans
  • salt and pepper to taste

 

 

Wash lima beans. Drop lima beans in water and a little vinegar and set aside. Heat oil in a pot, add onions, garlic and sautee until golden. Add lamb and brown.

Add tomatoes and simmer covered for about 1.5 hours or until meat is tender. Drain and add lima beans. Simmer covered for 30 minutes more or until lamb and lima beans are tender.
