Greek Recipe: Fish Chowder

GREEK RECIPE: Fish Chowder or Kakavia or Bouilliabaisse

  • 2 lg onions minced
  • 3 Tbs olive oil
  • 3 Qts boiling water
  • 1 lb smelts
  • 1 lb any small fish
  • 1 lb cod fillets
  • 1 lb haddock fillets
  • 1 lb fresh shrimp in shells
  • 2 samll lobsters split, claws cracked and removed from body
  • 1 No.2 cansolid pack tomatoes broken up
  • 2 Tbs minced parsley
  • 1/2 cup dry white wine
  • salt and pepper to taste

 

Cut fish into 3" pieces. Heat oil in a large pot and sautee onionsd until golden. Slowly add boiling water, tomatoes, salt and pepper and all other ingrediants except wine. Bring to a slow boil and cook uncovered for 15 minutes. Add wine and cook for 5 minutes more.

Serve immediately. Serves 6.
