Greek Recipe: Black Eyed Pea Soup

GREEK RECIPE: Black Eyed Pea Soup

  • 2 cups dried black-eyed peas
  • 3 celery stalks with leaves diced
  • 1/4 prosciutto cut into very small pcs
  • 1 lg onion chopped fine
  • 1 clove garlic minced
  • 2 bay leaves
  • 2 cups solid pack tomatoes broken up
  • 2 qts water
  • salt and pepper to taste

 

Pick over and wash peas. Soak in cold water overnight. Drain beans. Bring to boil in 2 qts water. Reduce to simmer covered for 1 hr. Add all other ingrediants, mix thoroughly. Bring to boil again, reduce to simmer covered for 30 minutes more or until beans are tender. Serve immediately. Serves 6.
