GREEK RECIPE: Baked Kritharakia or Orzo

Boil kritharakia for 6 to 8 minutes in rapidly boiling water. Drain and set aside. Beat milk and eggs lightly in a large bowl. Add melted butter and blend. Add tomato paste, kritharakia and cheese. Mix well. Place in a greased baking dish and bake in a pre-heated oven for 25 minutes or until top becomes golden brown. Serves 4.
