GREEK RECIPE: Meatballs or "Keftedes"

  • 2 lbs ground round
  • 1 onion grated
  • 1/4 tsp parsley flakes
  • 1/4 tsp dried spearmint leaves
  • 1/4 tsp dried oregano
  • 1/4 cup cold water
  • 1/2 cup olive oil
  • salt and pepper to taste

Place everything except water and oil in a bowl. Knead thoroughly and add water a little at a time until mixture is soft and pliable. Roll into balls about 2" in diameter and flaten slightly. Heat oil in a frying pan and fry patties about three minutes on each side or until golden brown.

Fried potatoes and a green salad go well with this.
