Greek Recipe: Lamb Pilaf

GREEK RECIPE: Lamb Pilaf

  • 2 lbs lean lamb cut into 1" pcs
  • 1 Lg onion minced
  • 6 Tbs butter
  • 1 cup tomato puree
  • salt and pepper to taste
  • 1.5 cups rice
  • 2 cups boiling water

Heat butter in a pan and sautee onion until golden brown. Add lamb and brown. Add puree, salt and pepper. Bring to a simmer covered for about 1.5 hours. Add rice and boiling water. Mix thoroughly so that rice doesnt stick together. Bring to a simmer covered over lowest flame possible for 25 minutes more. Do not stir again. Do not remove lid until ready to serve.
