Greek Recipe: Baked Lamb Chops in Paper or Foil

GREEK RECIPE: Baked Lamb Chops in Paper or Foil

  • 8 loin or shoulder lamb chops about 1" thick
  • 4 Tbs butter
  • 2 Tbs olive oil
  • 2 clove galic minced
  • 1 cup tomato puree
  • 1 tsp dried oregano
  • 1/2 tsp parsley flakes
  • 1/4 cup dry white wine
  • salt and pepper to taste
  • juice of 1 lemon
  • parchment paper

Heat butter in a pan, brown lamb chops and set them aside. Add olive oil to pan and sautee garlic until golden. Add puree and all seasonings. Bring to simmer uncovered for about 30 minute or until mixture thickens. Remove from flame. Place each chop on a piece of parchment paper. Spoon mixture over each chop until used up. Fold paper over each chop like an envelope. Place in uncovered baking dish and bake in preheated 350° fro 45 minutes. Serve chops in the paper. Aluminum foil may be substituted for the paper. Serves 4.
