GREEK RECIPE: Fried Fish
2 lbs fresh cod, whiting, whitefish, flounder, halibut, perch, pike, haddock, sole, smelts, sand dabs, etc. to serve 6. There is no special way the Greeks fry fish. Fish is either dusted wioth four or dipped in flour, then in beaten eggs and again in flour and fried in olive, vegetable oil or butter.
What makes fried fish uniquely Greek is Skordalia, heavy on the garlic type sauce or paste which is served with the fish after frying.
