Greek Recipe: Baked Mackerel

GREEK RECIPE: Baked Mackerel

  • 2 lbs mackerel, cleaned, heads removed
  • 1 clove garlic crushed
  • 1 onion grated
  • 4 lg tomatoes sliced 1/4 thick
  • juice of one lemon
  • 1 tsp parsley flakes
  • salt & pepper to taste
  • 1/2 cup water

 

Wash fish thoroughly and wipe dry. Place fish close together side by side in an ungreased baking pan with 1/2 cup water. Pour lemon juice over fish. Sprinkle with garlic, onion and top with sliced tomatoes. Sprinkle parsley flakes, salt and pepper over tomatoes. Bake in preheated 375° oven for 35 minutes or until fish flakes easily with a fork. Baste every 10 minutes with liquid from pan. Serves 6.
