GREEK RECIPE: Cheese Pie Tiropita

Prepare pastry sheets and set aside. Crumble cheese in a large mixing bowl with the tines of a fork. Beat eggs lightly with the milk and add to the cheese. Add pepper and nutmeg and mix with a wooden spoon until thoroughly blended. Grease a 9 x 13" baking pan and line with half the pastry sheets, brushing each one with butter. Extend sheets over rim of the pan. Spread mixture evenly over the sheets. Top with remaining pastry sheets, brushing each one with butter. Press sheets frimly together on rim of the pan and trim with a sharp knife. Brush top with butter. Diagonally score top deeply about every three inches to form diamond shapes. Bake in a pre-heated 350° oven for about 45 minutes. Remove from oven and let stand for one hour before cutting into pieces.
